With the added pecans and a pinch of sea salt, each cookie has that little touch of the salty crunch we all crave for, with the soft and chewy oatmeal inside and little pockets of melting chocolate goodness. A pleasant and tasty sweet treat that can hardly be surpassed. We love to bake a ton (make that a double!) As part of our meal prep, to serve when the family gathers, or to give to friends after a baby is born, or when they’re having an especially tough week had. A soft and chewy oatmeal will always brighten your day.

Healthy oatmeal chocolate chip cookies to your liking

These simple and healthy oat cookies can easily be made for any need they need. We ran the recipe tests (and tastings!) To make sure this biscuit recipe could be made with options like gluten-free, dairy-free, egg-free, and even nut-free!

Gluten free – By using gluten-free quick-cook oats and gluten-free flour (like our favorite gluten-free flour mix from Bob’s Red Mill one on one), these cookies can be easily made gluten-free

Nut Free – Just skip the pecans and these cookies are nut free

Egg free – Skip the egg and use a flax egg instead by mixing 2 tablespoons of flax flour with 4 tablespoons of water and letting it sit for 3-5 minutes to thicken

No special dietary restrictions – This recipe was tested with all purpose flour and regular butter, and they are great!

Irresistible gluten-free oatmeal chocolate chip cookies come together in three easy steps; mix, scoop, bake. Mix up the cookie dough in less than 5 minutes, scoop the batter into cookie rounds and place on the baking sheet, bake for a short 12-16 minutes and voila, a batch of freshly baked cookies is ready to enjoy! Grab a glass of milk or a Cinnamon coconut latte and enjoy a freshly baked chocolate oat biscuit.

Ingredients for gluten-free oatmeal chocolate chip cookies

  • egg
  • Butter – Use soft butter
  • Cane sugar
  • Brown sugar
  • Oats – Use either regular quick cook oats or gluten-free quick cook oats
  • Gluten-free flour – We like to use Bob’s Red Mill’s gluten-free flour mix or King Arthur’s gluten-free flour mix, but you can use any gluten-free substitute for baking flour mixes. All-purpose plain flour will also work with this recipe if you don’t need it to be gluten-free
  • baking powder
  • sea-salt
  • Chocolate Chips – We like to enjoy life! Chocolate chips as a dairy-free option, and any semi-sweet or milk chocolate chips will work
  • Pecans – Use chopped pecans or leave them out nut-free

How to do G.lutefree oatmeal chocolate chip cookies

  • Preheat the oven to 350 degrees. Grease two baking sheets with butter or line them with parchment paper; put aside.
  • In a mixing bowl with a hand mixer (can also use a stand mixer or your muscles) Mix the egg, softened butter, cane sugar, brown sugar and vanilla until creamy. Add the oats, flour, baking powder and salt. Stir together or mix on low speed. Fold in chocolate chips and chopped pecans.
  • Scoop round spoons (about 2 tablespoons large, or 1.5 ounces) and place 1 to 2 inches apart on prepared baking sheets. Slightly flatten the rounds. Bake for 12-16 minutes, or until the cookies are light golden brown on the bottom and edges.
  • Take it out of the oven and let it cool on the baking sheet for a few minutes before transferring to wire mesh to cool completely.

How to Freeze Gluten Free Oatmeal Chocolate Chip Cookies

After the cookies are completely cool, place the cookies in a freezer-friendly container or bag and freeze for up to 3 months. To thaw, simply take it out of the freezer and let it thaw on the counter for 1 hour.
